Royal Dynasty is the newest, modern, upscale and antique design Chinese Seafood Restaurant opened on the Gold Coast, situated at the heart of Surfers Paradise.
Position Available: VICHI PTY LTD, trading as Royal Dynasty, is seeking a dedicated FULL-TIME Café or Restaurant Manager to join our prestigious team. Reporting directly to the Owner/Operator, you will be responsible for leading and training front-of-house staff, managing weekly rosters, and delivering impeccable 5-star customer service—from handling premium reservations to resolving guest inquiries and complaints with finesse. You will drive revenue through strategic upselling of signature seafood dishes, premium beverages, and banquet menus, oversee inventory management and stock rotation for both dry goods and perishables, handle daily cash and EFTPOS reconciliations, and coordinate closely with the Head Chef to ensure flawless, timely order fulfilment. Additionally, you will oversee restaurant opening and closing procedures, ensuring strict compliance with health and safety regulations, all while maintaining the sophisticated, clean, and welcoming ambience of our newest modern upscale antique-design venue, solidifying our presence in the heart of Surfers Paradise.
Responsibilities
- Planning and coordinating daily restaurant operations, including lunch and dinner service, private function bookings, and special event arrangements;
- Leading, supervising, and scheduling front-of-house and back-of-house staff, including recruitment, training, and ongoing performance development;
- Overseeing food and beverage preparation and presentation to maintain consistent quality, with particular attention to signature dishes such as Peking duck and live seafood selections;
- Managing inventory levels and ordering supplies, including fresh seafood, premium meats, and specialty Chinese ingredients, while minimising waste;
- Developing and managing budgets, monitoring financial transactions, handling cash reconciliations, and preparing regular performance reports;
- Ensuring full compliance with health and safety regulations, food hygiene standards, and liquor licensing requirements;
- Building and maintaining strong relationships with suppliers and vendors, negotiating contracts and ensuring the timely delivery of high-quality produce and goods;
- Addressing customer feedback and resolving complaints promptly to uphold the restaurant's reputation for excellence.
Requirements
- A relevant diploma qualification or at least three years of relevant experience.
- Team Leadership–Recruit, train, and motivate staff; conduct regular performance reviews and build a positive, low turnover team culture.
