Alberto’s Lounge is seeking a hands‑on Bar Manager in an intimate Italian trattoria in the heart of Sydney. This role suits an experienced bar manager who thrives in a small, fast‑paced environment, leads from the front, and takes pride in creating an environment were both guests and team members feel welcome.

About the Venue

Alberto’s Lounge is a neighbourhood trattoria with a Roman heart and a Sydney soul. Tucked behind a glowing neon sign, it’s intimate, familiar, and full of character. The menu roams across Italy, serving hand-cut pasta, crisp crostini, house-made gelato, and heart-warming mains made for sharing. Alberto’s captures the essence of Italy’s golden era of cinema and design, a celebration of Italian style and creativity from plate to paintwork.

About the Role

As Bar Manager, you will lead the day-to-day operation of the bar, driving exceptional beverage service, developing your team and ensuring every drink reflects the identity of Alberto’s Lounge. Working closely with the General Manager you’ll play a key role in creating a seamless guest experience where food, wine and cocktails come together effortlessly.

Key responsibilities include:

• Leading bar service and setting the standard during every shift
• Managing all aspects of the beverage program, including ordering, stock control and supplier relationships
• Recruiting, training, mentoring and developing bartenders
• Maintaining labour efficiency through effective rostering and team planning
• Driving consistency across cocktail preparation, wine service and beverage presentation
• Working collaboratively with the floor and kitchen teams to deliver a cohesive guest experience
• Monitoring beverage cost, wastage and stock variances while identifying opportunities for improvement
• Ensuring compliance with liquor licensing, food safety, workplace health and company standards

About You

This is a hands-on leadership role in a busy neighbourhood venue where personality, pace and attention to detail all matter. You’ll be present on the floor, leading from the front and creating an environment where both guests and team members feel welcome.

• Experience managing a restaurant or cocktail bar, ideally as a Bar Manager or Assistant Bar Manager
• Strong knowledge of classic cocktails, premium spirits and wine
• Demonstrated experience managing beverage costs, ordering, stock control and labour
• A natural leader who enjoys coaching, mentoring and developing others
• Calm and organised under pressure, with excellent communication skills
• A strong focus on service standards and guest experience
• Respect for safe, organised and well-run venues
