The Role

Join us as Head of Premium Dining and help shape the next era of luxury hospitality at Crown Melbourne.

Reporting to the Executive General Manager - Food & Beverage, you will lead the performance, growth and strategic direction of Crown Melbourne's premium dining portfolio, encompassing some of Australia's most recognised luxury restaurant concepts.

This pivotal leadership role is responsible for delivering exceptional guest experiences, maintaining premium hospitality standards and achieving strong commercial outcomes. You will oversee multiple venues, drive concept evolution, operational excellence and portfolio growth while strengthening Crown's position within Melbourne's competitive dining landscape.

In this role, you will:

• Lead the strategic direction, performance and brand integrity of Crown Melbourne's premium dining portfolio.

• Oversee portfolio financial performance including revenue growth, labour management, food and beverage costs and EBITDA outcomes.

• Drive concept development, innovation and market relevance across the premium dining portfolio.

• Lead, coach and develop a high-performing team of General Managers and senior restaurant leaders.

• Champion exceptional guest experiences through consistent premium service standards.

• Identify and deliver revenue growth opportunities including menu strategy, private dining and business development initiatives.

• Oversee venue openings, concept enhancements and capital projects to ensure successful execution and long-term performance.

• Present portfolio performance and strategic initiatives to executive stakeholders and contribute to Crown's broader food and beverage strategy.

• Foster a culture of accountability, innovation and excellence that reflects Crown's premium hospitality standards.

About You

You are an accomplished hospitality leader with experience across luxury restaurants, premium hospitality groups, five-star hotels or integrated resort environments.

Commercially astute and people-focused, you have a proven track record of leading multi-site operations, building high-performing teams and delivering exceptional guest and business outcomes.

You will also bring

• Significant senior leadership experience within luxury hospitality, premium restaurants, fine dining or integrated resort environments.

• Proven success managing complex multi-site or multi-concept food and beverage operations.

• Demonstrated experience leading large-scale P&L portfolios and delivering strong commercial outcomes.

• Strong financial acumen with the ability to analyse performance, develop strategies and manage significant budgets.

• Exceptional leadership capability with a history of developing and retaining high-performing teams.

• Experience identifying growth opportunities, driving innovation and evolving hospitality concepts.

• Sound knowledge of compliance, food safety, responsible service requirements and operational risk management.
